Apple Berry Salsa with Cinnamon Chips
I hope everyone is enjoying the holidays this year. If you are like me and still have some parties to attend…here’s a fun little salsa to bring with!
Apple Berry Salsa with Cinnamon Chips

Cinnamon Chips
4 (7-inch) flour tortillas
1 T. granulated sugar
1/2 tsp. ground cinnamon
Preheat oven to 400-degrees. Lightly spray tortillas with water. Combine sugar and cinnamon and sprinkle over tortillas. Using a pizza cutter, cut each tortilla into 8 wedges; place in single layer on pizza stone or cooking sheet. Bake 8-10 minutes or until lightly browned and crisp. Remove to cooling rack; cool completely.
Salsa
2 c. apples, peeled, cored and chopped
1 c. strawberries, sliced
1 kiwi, peeled and chopped
1 small orange
2 T. packed brown sugar
2 T. apple jelly
Place fruit in a small bowl. Zest and juice orange. Add orange zest and orange juice, brown sugar and apple jelly to fruit mixture. Mix gently. Spoon into chilled bowl. Serve with cinnamon chips.
Recipe Sunday - Quick Apple Dumplings
Quick Apple Dumplings

2 large apples, peel, core and cut each apple into 8 wedges
2 tubes crescent rolls, divided into 16 crescents
1/2 c. butter
1 c. sugar
1 tsp. cinnamon
1 can Mountain Dew soda
Wrap 1 apple wedge in each crescent, beginning at the narrow end. Place in a 9x13 pan. Melt butter, add sugar and cinnamon, stir well. Pour oven dumplings in pan. Pour soda over top. bake 45 minutes at 350-degrees.
Note: Serve warm or cold, with or without whipped cream or ice cream.

Recipe Sunday – Amish Apple Grunt
With all the snowy weather I thought today is a great day to turn on that oven and do a little baking.
Amish Apple Grunt
Diane Lapacek
1/2 c. sugar
2 T. butter
1 egg
1 cup flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 c. sour milk or buttermilk **
1/2 tsp. vanilla
2 c. apples, peeled and sliced
Cream sugar and butter together. Add egg and mix. Add flour, salt, baking powder, milk and vanilla. Mix all together. Add apple slices and pour batter into a greased 8 x 8 pan.
Topping
6 T. brown sugar
1 1/2 T. flour
1/2 tsp. cinnamon
1 1/2 T. butter
Combine all ingredients, mixing until it forms coarse crumbs. Sprinkle over apple batter. Bake at 375-degrees for 35 to 40 minutes.
NOTE: Serve hot with a scoop of ice cream.
**If you don’t have buttermilk, substitute 1/2 T. vinegar plus milk to equal 1/2 cup.

Happy St. Nick’s & Recipe Sunday – Tangy Ham in Cider
Here’s the recipe for this week. This is great to warm your house up and make it smell delicious!
Tangy Ham in Cider
Kim Lapacek
3-lb ham (or larger; whatever fits in your slow cooker)
4 c. Lapacek’s Apple Cider
1 T. Lapacek’s Mulling Spice
2 T. Worcestershire sauce
1 c. brown sugar
2 tsp. dry mustard
1 tsp. ground cloves
Place ham, cider, mulling spices and Worcestershire sauce in slow cooker. Cover. Cook on Low 9-10 hours. Remove ham from cider and place in baking pan.
Take a quarter cup of the juice from the slow cooker and mix it with the brown sugar, dry mustard and ground cloves to make a paste. Add more juice as needed. With a spatula, spread the paste on the top of the ham.
Bake at 375-degrees for 30 minutes, or until the paste has turned into a glaze.
