Double Strawberry Cream Pie – Market Fresh Recipe

Happy Sunday everyone!  My Market Fresh Ingredient from this week’s market is STRAWBERRIES!  I’ve actually been getting a lot of calls about picking strawberries at our orchard lately.  I just want to make it clear that we do not grow strawberries here.  Please check out THIS POST about a couple of strawberry farms in our area.

So, the recipe I’m about to share with you is one that I came up with myself.  It was inspired by my love of Banana Cream Pie and the fact that I have TONS of strawberries to eat up. 

Double Strawberry Cream Pie

Ingredients

1 item(s) Ready Crust 25% Less-Fat Graham Cracker Ready pie crust  

1 cup(s) strawberries  

4 oz light whipping cream  

2 cup(s) fat-free sugar-free pudding, I used white chocolate flavored - vanilla or cheesecake would work too 

Instructions


Make pudding per package instructions. Pour into graham cracker crust and let set. 001Slice strawberries and cover top. 002Spread a layer of whipped cream over top. 003Add one more layer of sliced strawberries.  005ENJOY!

Strawberry Picking Time!

076It’s that time of year again – strawberry time!  The girls and I picked Diane up on Tuesday morning and we headed north to Pardeeville to pick ourselves some berries.  I’m not actually a huge fan of strawberries but they are are to beat when you’re eating them fresh off the vines.  Cedi and Capri were fabulous pickers and Pip did a great job napping while we were there.  066   Capri worked ahead of Grandma in the field.  069 It’s not everyday that you see a girl in a tutu like skirt picking strawberries!070    Here’s Persimoni – slacking on the berry picking job…074 Cedi was a good berry picker but I think she mostly just went down the row and ate as many as she could.  Regardless, she picked about a quart and a half.  075   Capri was the best berry picker of the two girls.  She easily picked two quarts as well as ate her share.  078If you look carefully at Cedi’s mouth area you’ll see it’s quite obvious that she may have enjoyed a strawberry or two… 073

Spinach Mac & Cheese – Market Fresh Recipe

I have to start out this post with a big HAPPY FATHER’S DAY to all the dad’s out there!  I hope you all had a wonderful day celebrating with the family.  I debated putting up the recipe for the meal we made for Jared this morning but since I just couldn’t really relate it to the market right now I’m just going to give you the link.  If you want to make an amazing breakfast for someone special be sure to make these – Cinnamon Roll Pancakes – BEYOND AMAZING!

 

I can’t even begin to tell you how many times I’ve tried to like spinach.  It just looks so rich, green and delicious but no matter how often I’ve had it – it just doesn’t work for me.  Regardless, Diane found a good looking recipe that combines spinach with one of my favorite things – Macaroni & Cheese over on Martha Stewart’s site.

Spinach Mac and Cheese

Ingredients

  • 3 tablespoons butter or margarine
  • 1/2 cup minced onion
  • 1/3 cup all-purpose flour
  • 4 cups whole milk, (did you know that JUNE is National Dairy Month? – be sure to support your local dairy!)
  • Coarse salt and ground pepper
  • 2 bunches curly- or flat-leaf spinach (about 1 3/4 pounds total), trimmed, washed, and cut crosswise into 1/2-inch-thick strips
  • 5 ounces Gruyere cheese, grated (2 cups)
  • 3/4 pound elbow macaroni, cooked according to package instructions

Directions

  1. In a large saucepan, melt butter over medium. Add onion and cook until translucent, 6 minutes. Whisk in flour and cook, stirring frequently, until mixture is pale golden and has a slightly nutty aroma, about 2 minutes. Whisking constantly, add 2 cups milk. Add remaining 2 cups milk, raise heat to medium-high, and whisk until smooth; season with salt and pepper. Cook, whisking constantly, until sauce comes to a boil, 8 to 10 minutes. Reduce heat to low and simmer gently, stirring occasionally, until sauce thickens, 13 to 15 minutes.

  2. Add spinach and cook, stirring constantly, until wilted, about 3 minutes. Add cheese and stir until melted, about 2 minutes. Add cooked macaroni and stir to combine. Serve immediately.

Buttery Shrimp and Radish Pasta – Market Fresh Recipe

Produce is a bit late this year but lettuce, spinach and radishes are just a few things popping up at your markets.  Today I’m going to share with you one of Diane’s recipe’s that feature radishes. radish2

 

Buttery Shrimp and Radish Pasta

Ingredients:


Coarse salt and ground papper
3/4 pound linguine or other long pasta
1/4 cup (1/2 stick) unsalted butter
2 garlic cloves, thinly sliced
1 large bunch radishes, thinly sliced, greens rinsed well and roughly chopped
1 pound frozen large shrimp (peeled and deveined), thawed

 

Directions:

In a large pot of boiling salted water, cook pasta according to
package instructions. Reserve 1 cup pasta water; drain pasta and
return to pot. Add 2 tablespoons butter and toss until butter is
melted; keep warm.


Meanwhile, in a large skillet, melt 1 tablespoon butter over
medium-high. Add garlic and radishes and cook, stirring occasionally,
until radishes are crisp-tender, 3 minutes. Add radish greens and cook
until wilted. Season with salt and pepper, then add to pasta and stir
to combine. In skillet, melt 1 tablespoon butter. Add shrimp, season
with salt and pepper, and cook, stirring occasionally, until opaque
throughout, 4 minutes. Add shrimp to pasta and toss, adding enough
pasta water to create a light sauce that coats pasta.

Mowing Lawn – the Environmentally Friendly Way

Happy Sunday!  Just a short post today.  We’ve decided to take a new approach at mowing our lawn around the orchard (at least part of it).  056Itsy051Zestar,  053  Tree,055and Super April have been tied out of their pen on the weekends to do a bit of ‘mowing’.  It’s been tasty for them too!
