Saucesational – An Experiment in Applesauce: Cortland

With the lack of apples this season we haven’t had to sort as many like we usually do so we closed the store on Monday’s to take a breather.  Well – yesterday I may have gotten too into this sauce experiment.  I made six mini crock pots and one big crock pot of sauce.  I hope my babysitters are excited about feeding the kids some sauce this week!

Since Cortland’s are starting to run low I wanted to tell you about them right away.  They took quite awhile to cook down.  They definitely make a chunkier sauce but I’ve found that if you leave the apples in the slow cooker longer they cook down more.  I left these apples in about an hour longer than I typically do – the sauce was still a bit chunky but nothing a kid couldn’t handle. 
They also made a gorgeous white sauce.  It was too tart for me but I can see why so many of our customers like using the Cortland’s for sauce.  They cook into a really appley, slightly tart sauce.  With there great texture, color and flavor these apples are definitely a saucesational winner.
